It feels very, very hot outside. And humid. It’s sticky and gross and any sane person would not have picked today to crank their oven to 400F and make fries.
But here we are.
On the absolute plus side: these Oven Baked Paprika Rutabaga Fries are so worth it. Literally, there is sweat running down my temple just from standing near the oven, but I’m happily snacking away. (Also, AC, where you at?!)
So why Rutabaga french fries? I have nothing against the humble potato (and in fact, from a health perspective I think it gets an unwarranted bad rap), but there are so many other nutrient-dense vegetables that also deserve your attention.
And the rutabaga is one of them.

What The F*ck is a Rutabaga?
Excellent question. It’s actually a root vegetable (I guess you could call it a root-abaga. See what I did there? No good? Alright, moving on.) and it’s in the same cruciferous family of cabbage, Brussel’s sprouts + cauliflower.
If you’ve never eaten it, its very mild in flavour so you can pretty much add it to anything. Growing up my mom always made a casserole using apples and rutabaga, and it is still one of my favourite things to eat over the holidays.
Like it’s cruciferous family members, rutabagas are high in sulfur-containing compounds and antioxidants that can protect the body from cancerous cells, aging and free radical damage. They’re also hella high in fibre (yay digestion!) and they contain about half the carbs of their starchy potato friend–meaning if you’re trying to lose weight, these could be a great option to throw into the mix!
These fries have more of a crunch than an actual fry, but they are pretty dang tasty.

Oven Baked Rutabaga Fries
Ingredients
- 1 rutabaga
- 1 tbsp olive oil
- 1 tsp paprika
- 1/4 tsp cayenne
- salt + pepper to taste
Instructions
- Preheat oven to 400F. Line a baking sheet with parchment paper.
- Peel rutabaga and cut into french fry shaped spears.
- Spread rutabaga fries evenly onto parchment paper. Drizzle with olive oil and sprinkle with paprika, cayenne, salt and pepper. Bake for 40 minutes, or until cooked through and crispy.
- Serve with a side of sriracha mayo and garnish with chopped parsley.
