Grain-Free Sweet Cherry Galette | The Nourished Mind

It’s been a few years since I’ve last made a cherry galette.  This time though, I wanted to try to make a grain-free sweet cherry galette. This galette crust is made using my tried-and-true almond flour recipe, and I’ve used it from everything to pies, quiches and savoury galettes.

So if you are grain-free, paleo, or just trying to dabble in the world of gluten-free baking, this Grain-Free Sweet Cherry Galette recipe is for you!

How To Make The Grain-Free Sweet Cherry Galette

First, you’ll want to make the galette dough. What I love about this recipe is that you can simply make it in the food processor: add all your ingredients and blend until smooth! Easy peasy! If you don’t have a food processor, no problem: you can work this by hand. Just make sure to break up the butter into small, pea-sized pieces. Form the dough into a ball and cover. Chill dough for at least an hour. I like to make my dough the day before.

While your dough is chilling, make the filling by tossing all the ingredients together in a bowl. Again, this is better if it has time to sit for 30 minutes or longer.

To make the galette, roll out the chilled dough to a 10″ circle, about 1/4″ thick, on a piece of parchment. Careful not to role it out too thin, as the dough will crack and break when you try to wrap it around the filling. At this point I like to place the parchment (with the dough rolled out) onto a baking sheet.

Add your filling, and gently wrap the dough around it, one small section at a time. Because this dough is gluten-free, it cracks easily. However, it’s real easy to repair: once you’ve formed the galette, simply press the cracks together and reform.

Brush the dough with your beaten egg, and sprinkle with almonds and turbinado sugar. Bake at 375F for 35-40 minutes until the crust is golden brown and the filling is bubbling. Cool completely before eating.

  • maple syrup
  • butter

Substitutions

Butter. I know dairy can be an iffy one in the paleo community. I consider grass-fed butter to be paleo, but I know it’s a grey area. If you’re avoiding dairy, you can swap out for ghee or coconut oil instead.

Grain-Free Sweet Cherry Galette

A healthier twist on a summer dessert, this galette is grain- and gluten-free and so easy to make!

Ingredients

Grain-Free Crust

  • 1 1/2 cup (150g) almond flour
  • 1/2 cup (55g) tapioca starch
  • 6 tbsp cold butter, cubed
  • 1 egg
  • 1/4 tsp sea salt

Cherry Filling

  • 2 cups (1 lb) sweet cherries halved, pitted
  • 2 tbsp maple syrup
  • 1 tbsp tapioca starch

To Assemble

  • 1 egg whisked
  • 2 tbsp sliced almonds
  • 1 tbsp turbinado sugar optional

Instructions

  • In a food processor combine all pie dough ingredients and process until mixture comes together and forms a ball.
  • Chill dough, covered, in the fridge for 1 hour.
  • Meanwhile, toss together all the filling ingredients and set aside.
  • To assemble: preheat oven to 375F.
  • Roll out chilled dough with a rolling pin to a 10" round, and 1/4" thickness.
  • Transfer dough to parchment-lined baking sheet. Add filling to centre to dough. Fold the edges of the dough carefully over the filling–it should create a nice ribbon effect.
  • Brush dough with beaten egg wash and sprinkle with almonds. If using, sprinkle on turbinado sugar.
  • Bake galette at 375F for 35-40 minutes, until edges are brown and filling is bubbling.
