In a food processor combine all pie dough ingredients and process until mixture comes together and forms a ball.
Chill dough, covered, in the fridge for 1 hour.
Meanwhile, toss together all the filling ingredients and set aside.
To assemble: preheat oven to 375F.
Roll out chilled dough with a rolling pin to a 10" round, and 1/4" thickness.
Transfer dough to parchment-lined baking sheet. Add filling to centre to dough. Fold the edges of the dough carefully over the filling–it should create a nice ribbon effect.
Brush dough with beaten egg wash and sprinkle with almonds. If using, sprinkle on turbinado sugar.
Bake galette at 375F for 35-40 minutes, until edges are brown and filling is bubbling.
