PB + J Vegan Milkshake | The Nourished Mind

Happy July! And happy Canada day!

It’s finally summer: I can show off my pasty white skin and listen to the gasps on the street from the people who just think they’ve seen a ghost. Joking aside, it’s nice to finally complain about hot it is and dream about the future that is fall. (Cause what are we talking about it if we’re not complaining about the weather?)

If summer has you feeling too hot to stop, then this PB + J Vegan Milkshake will be your new best friend. It’s classic comfort: creamy peanut butter, fresh strawberries and (dairy-free) ice cream! I love ice cream–like love. Like could eat a pint of ice cream til the day I die and never really over think it–but it’s an unrequited love. Ice cream always leaves me feeling sad and (tummy) troubled. And nothing makes me less excited to wear one of my oh so many crop tops than a bloated belly.

Enter dairy-free ice creams. I used Coconut Bliss’s Vanilla Island ice cream, but you can use whatever is available to you! You could even use two frozen bananas. But I wanted to go for a classic milkshake, and Coconut Bliss is one of the few brands that doesn’t taste dairy-free. In fact, I may be so bold as to say I like it just as much, if not more, than regular ice cream.

Not vegan or dairy-free? Feel free to use regular vanilla bean ice cream!


I tried to convince myself this was a smoothie to justify having it for breakfast. But then I figured, it’s summer! I’m basically on vacation, only I still have to go to work and pay bills and do dishes. Still, this makes day to day living seem pretty glamorous.

So yeah, go make this. Or just dip strawberries in peanut butter and call it day (hm…is that a thing? It definitely should be).

On that inspiring note, I’m going to sign off and get some sleep. The heat makes me hella sleepy, and I promised myself I’d get my butt to the gym at least one day this week/month/millennium.

Happy healthy cooking! And if your weekend has been all things boozy, burgers and bbq—that’s cool too. (I’m just saying that this PB + J Vegan Milkshake would fit right in. That’s all!)

PB and J Vegan Milkshake

Course Dessert, Drinks
Keyword milkshake, vegan
Servings 1

Ingredients

  • 1 1/2 cup Coconut Bliss Vanilla Bean Ice Cream
  • 1/2 cup almond milk unsweetened
  • 10 strawberries divided
  • 3 tbsp peanut butter divided
  • coconut whip cream

Instructions

  • In a blender, blend 6 strawberries until smooth. Set aside.
  • In a small sauce pan, heat 1 tbsp peanut butter until melted. Set aside. 
  • In a clean blender, blend the ice cream, almond milk, 4 strawberries and 2 tbsp peanut butter until smooth.
  • To assemble: drizzle strawberry puree and peanut butter into milkshake glass. Pour in milkshake and top off with coconut whipped cream. Enjoy!

There’s a lot of mixed info out there, but here’s the truth:

❌ Dairy doesn’t *always* mess with hormones.

✅ Some people are sensitive to it, while others digest it just fine.

✅ Full-fat dairy (like yogurt) has probiotics, calcium & vitamin D—which can actually help PMS!

The key? Listen to your body. If dairy triggers symptoms like bloating or cramps, you might want to try temporarily cutting it out to see how you feel.
