Paleo Salted Caramel Brownies

Mmmm. These brownies. Over the top fudginess with a sweet and salty caramel sauce. Yes, yes, yes.

This is my kind of baked good. Paleo Salted Caramel Brownies. Decadent almost to the point of overkill. Not overly sweet, but definitely rich. These are not the same qualities I look for in a partner (well, not entirely). Oh, and to top it all off, they are of course, paleo.

I also know recipes are a hit when they make their way around the office. Cause sometimes you make something healthy, and everyone gets a little apprehensive. “Oh, it’s gluten-free,” they say, poorly attempting to hide their disappoint. This is the exact opposite way I react to finding out there’s a gluten-free treat in office, but similar to how I react when someone tells me there are beans in a dish. “Oh, beans. High in fibre. Yummy.” Because I know they’re good for you, but the texure–the freaking texure. Gross.

But these puppies? Not gross. The opposite. Magic. No, these were devoured. Obliterated. Thoroughly enjoyed. So of course I have to share the recipe. To make this Paleo Salted Caramel Brownie Recipe, you do have to make the Paleo Vegan Caramel Sauce first. You can make it in advance, or while the brownies are baking. The trick is to let it reduce and get as thick as possible. Let it coat the back of a spoon. As for the brownies, when you’re cutting them, wait for them to be completely cooled and then dip a knife into boiling water before cutting into it– this will help create nice clean lines.

This is meant to be eaten with a fork–it’s quite messy! (But in the most delicious way possible.)

Paleo Salted Caramel Brownies

Course Dessert

Servings 12

Ingredients

  • 1 cup almond flour
  • 3/4 cup cocoa powder
  • 3/4 cup coconut sugar
  • 1 tsp tapioca
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup coconut milk
  • 3 tbsp coconut oil melted
  • 1/2 tsp vanilla
  • 1/2 cup dark chocolate chopped
  • 1 recipe Paleo Vegan Caramel Sauce (recipe link below)
  • flaky sea salt to taste

Instructions

  • Preheat oven to 400F. Line an 8x8 inch baking dish with parchment.
  • In a large bowl, whisk together all dry ingredients. Add in all wet ingredients and mix to combine.
  • Stir in chocolate.
  • Pour into baking dish and spread evenly with a spatula. Bake at 400F for 30 minutes or until a toothpick comes out clean. Cut into 12 pieces and drizzle with Paleo Salted Caramel Sauce and sprinkle with flaky sea salt.
