I don’t know why it’s taken me so long to get around to this post! This recipe is so tasty (and sooo gluten-free) and I’ve been pumped to share it. And yet. I think winter has me wanting to hermit inside and drop everything that doesn’t involve being tucked into my blankets like a snug burrito.
Personally, I like the snowy weather. Dreary days get me weirdly excited. Is weather fetish a thing? There’s just something about slushy snow, and rainy puddles that make me want to grab a cup a coffee and write or get creative or just day dream. Yeah, I like winter.
It’s the commute that kills. I keep checking my emails, hoping life will be cancelled for the day. Attention human adult: Please stay in, sleep and watch Gilmore Girls.
So far? No dice. (So I cheated: I booked the day off to do just that.)
2019 has been off to a really great start. 2018 kind of felt like a giant whirlwind: of events, of emotions, of people. There was a lot going on. 2019–not without its hiccups, sure–feels calmer. The dust is settling. There’s a sense of routine. A sense of normalcy.
And what’s more normal than me making a batch of paleo banana bread?! (Nothing, I tell ya.)
This Paleo Chocolate Coffee Banana Bread is so yummy, and oh so chocolatey. The coffee-infusion is subtle, but it adds nice depth if you ask me! Chocolate, coffee and bananas were all made to be best friends. For this recipe, you could add instant espresso powder instead of brewed coffee for more of a kick. But I never have any on hand, because the amount that I would use it otherwise would be quite negligible. If you do try it, I’d go with 1 tsp of espresso powder.
Also, the Paleo Chocolate Coffee Banana Bread was a hit according to my roommate, friends and coworkers. No one can tell it’s grain-free, which is the ultimate goal. I really want to try my luck at doing some nut-free baking (why do all of my favourite people have nut allergies?!). But so far, everything ends up dry and papery. Not quite what I had in mind.
Also, because yesterday was Valentine’s day, can I just take a second to say to you, person that is taking the time to read this post throughout your, what I’m sure, is a super busy day: I love you. Big time.
Oh, and can I also say that love comes in so many different forms. There isn’t one way to love anyone. I think Valentine’s day cards and chocolates are very cutesy, but we show love in hundreds of ways: like bringing your friend a cup coffee or even tagging them in a meme you thought was funny. As it happens, I love love. Because I love people. And I love that I have people in my life that I can have witty banter with, heartfelt chats, movie nights in or wild nights out. People that bring out so many different parts of my personality.

KITCHEN ESSENTIALS FOR THIS RECIPE
Paleo Chocolate Coffee Banana Bread
Ingredients
- 3 bananas
- 2 eggs
- 1/4 cup coconut oil melted
- 3 tbsp maple syrup
- 1 tsp vanilla
- 1 1/2 cup almond flour
- 1/4 cup cacao
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup dark chocolate chopped
- 1/4 cup brewed coffee cooled
Instructions
- Preheat oven to 350F. Line a loaf pan with parchment paper.
- In a large bowl, combine bananas, eggs, butter, maple syrup and vanilla. Set aside.
- In a small bowl, whisk together almond flour, cocoa powder, baking soda, baking powder and salt. Stir dry ingredients into wet until combined.
- Stir in chopped chocolate and brewed coffee. Pour batter into loaf pan and evenly spread out.
- Bake at 350F for 40-50 minutes, until toothpick inserted in the centre of loaf comes out clean.
