How To Make Honey Hot Salmon Bites Tacos with Mango Salsa

These tacos come together in three easy parts: cooking the salmon, mixing the salsa, and assembling your tacos.

  1. Season and air fry the salmon – Toss 1 lb of salmon chunks with olive oil, salt, garlic powder, and paprika. Air fry at 400°F for 6 minutes.
  2. Glaze and crisp – While the salmon is hot, coat with a mixture of honey, sriracha, and melted butter. Return to the air fryer for 3 more minutes to caramelize.
  3. Mix the mango cucumber salsa – In a bowl, combine diced mango, cucumber, jalapeño, lime juice, chopped cilantro, salt, and pepper.
  4. Assemble the tacos – Warm corn tortillas in a dry pan for 20–30 seconds per side. Spread with guac or mashed avocado, top with hot honey salmon bites, spoon over mango salsa, and sprinkle with crumbled feta. Done!

Ingredients

  • 1 lb Salmon cut into 1" chunks
  • 1/2 tsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Paprika

Hot Honey Glaze

  • 2 tbsp Honey
  • 2 tbsp Sriracha

Mango Salsa

  • 2 each Mango peeled and diced
  • 1/2 each Cucumber diced
  • 1 each Jalapeno Pepper seeded and minced
  • 1/4 cup Cilanto finely chopped
  • 3 tbsp Lime Juice
  • Salt and Pepper to taste

For The Tacos

  • 12 Corn Tortillas heated
  • Guacamole store-bought or homemade
  • Feta crumbled
  • Cilantro finely chopped

Instructions

Prepare The Salmon Bites

  • In a medium bowl, toss the salmon chunks with olive oil, salt, garlic powder, and paprika until evenly coated. Place the seasoned salmon in the air fryer basket and cook at 400°F for 6 minutes.

Make the Hot Honey Glaze

  • While the salmon cooks, whisk together the honey and sriracha in a small bowl. After the 6 minutes, remove the salmon and toss it gently in the glaze until well-coated. Return the glazed salmon to the air fryer and cook for an additional 3 minutes, or until slightly caramelized and cooked through.

Prepare the Mango Salsa

  • Combine the diced mango, cucumber, jalapeño, cilantro, and lime juice in a bowl. Season with salt and pepper to taste. Mix well and set aside.

Warm the Tortillas

  • Heat a dry skillet over medium heat. Warm each corn tortilla for 20–30 seconds per side until soft and pliable. Wrap in a clean towel to keep warm while you assemble the tacos.

Assemble the Tacos

  • Spread a spoonful of mashed avocado or guacamole onto each tortilla. Top with hot honey salmon bites, a generous spoonful of mango salsa, crumbled feta and cilantro. Serve immediately and enjoy!

Notes

Tips:
  • No guacamole? No problem. Mash a ripe avocado with a squeeze of lime and a pinch of salt for a quick swap.
  • For extra heat, leave the seeds in the jalapeño or drizzle extra sriracha on top.
  • Store all components separately in air-tight containers in the fridge. Salmon will keep for up to 3 days.
