Okay, so I know putting miso in blondies is nothing new. But let me say this: it’s also nothing short of magic.
Seriously: whoever came up with the idea to add miso? Absolutely brilliant. Because it makes these blondies everything you hope: decadent, sweet, salty. They. Are. So. Freaking. Good.
Naturally, I had to add my own twist to these bad boys. So here is a totally grain-free Miso Blondies recipe.
How To Make Grain-Free Miso Blondies
What I love about this recipe is how quickly it comes together.
First you mix all of your wet ingredients: miso, eggs, coconut sugar, cashew butter, melted butter and vanilla. Then stir in your dry: almond flour, coconut flour, baking soda, salt. Once combined, stir in your white chocolate.
Pour the batter into a prepared 8×8 baking pan, bake at 350F for 35-40 minutes. Cool and sprinkle with Maldon salt!

Substitutions
Cashew Butter: You can swap out the cashew butter for any nut butter you have on hand!
Coconut Sugar: You could swap out the coconut sugar for maple syrup, but you’ll end up with a more wet, sweeter, batter, so you may have to bake it longer. I haven’t tried it, but I would try using 3/4 cup maple syrup instead of the whole cup.
Butter: you can swap out 1:1 butter for coconut oil if you’re looking to make it dairy-free. You’ll probably end up with a more crisp product!

Grain-Free Miso Blondies
Ingredients
- 3 tbsp miso paste
- 2 ea eggs
- 1 cup coconut sugar
- 1/2 cup cashew butter
- 1/4 cup melted butter
- 2 tsp vanilla
- 1 1/2 cup almond flour
- 1/2 cup coconut flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup quality white chocolate (I used Green + Blacks) chopped
Instructions
- Preheat oven to 350F. Line an 8x8in baking pan with parchment.
- In a large bowl, whisk together wet ingredients: miso, eggs, coconut sugar, cashew butter, melted butter, vanilla.
- Add in dry ingredients and stir to combine: almond flour, coconut flour, baking soda, salt. Stir in white chocolate chunks.
- Pour batter into prepared pan. Bake for 35-40 minutes until cooked through, and a knife inserted comes out clean. Cool completely. Cut into 16 pieces. Sprinkle with flaked sea salt.
