Okay, now that we’ve got that covered, let me take a quick second to talk about HOW EXCITED I AM. Because I am–I really am.
If you haven’t already heard, I quit my full-time food styling job at the creative agency I’ve been working at for the last two and a half years, to pursue my love of healthy eating! I’m back at Impact Kitchen, my work home before I became a food stylist! Only this time, I’m back in their head office as their menu developer and nutrition expert! And I’m so thrilled for what’s to come.
Don’t get me wrong, I love food styling. It’s been such a fun and creative learning process. I’ve enjoyed thinking about how I look at food (beyond its nutritional makeup) in an entirely new context. I hope to continue learning and improving my styling (and photography!) skills.
But I was really missing the nutrition component. I love love love talking health and wellness. And I’m really looking forward to working with a company who really believes that what we eat deeply affects our health. It’ll be a new challenge, but I look forward to it!
With that news out of the way, let me introduce this fun and easy how-is-this-a-recipe-its-probably-not Chai Spiced Lion’s Mane Coffee. It’s sooo simple. Simply add in your chai spices–think cinnamon, ginger, cardamom and cloves–and your Lion’s Mane to your ground coffee before brewing it, and voila! I put all mine in a french press, but you can do this in a coffee maker too. (However, if you make it in a coffee maker, add the Lion’s Mane to your already brewed coffee in its mug, to get all the benefits!)
So what is Lion’s Mane?
It’s a mushroom! With quite a bit of health benefits, especially for the brain! Let’s take a look:
- It may protect against dementia by stimulating the growth of brain cells.
- It’s been shown to improve mild impairment in cognitive function.
- It can improve symptoms of anxiety and depression
- It can help balance blood sugar (meaning more stable energy and less irritability
While you can actually enjoy it raw, dried or cooked, I prefer it in an easy powder form, like Four Sigmatic’s Lion’s Mane Mushroom Elixir Mix. It contains Lion’s mane, but also Rhodiola, which is another adaptogen that helps your body better handle stress! (Perfect for newly stressful situations, like starting a new job!)
This Chai Spiced Lion’s Mane Coffee has a lovely autumn vibe to it, while still letting me enjoy my morning french press. Like I said, it’s barely a recipe. Simply a fun way to add a little (chai) spice to your life! If you want to give it a more frothy, latte feel to it, simply pour your coffee mixture in a blender, add 1 tsp coconut oil and a splash of non-dairy milk, and blend! Frothy goodness!
Personally, I prefer it just as black coffee, cause I’m a simple gal, but it looks very pretty and indulgent as a latte! You could also add a touch of maple syrup or honey, but the Four Sigmatic’s Lion Mane Mushroom Elixir Mix already has a bit of stevia, so I don’ think it needs it!

Chai Spiced Lion's Mane Coffee
Ingredients
- 2 cups water boiling
- 4 tbsp dark roast coffee ground
- 1 packet Four Sigmatic Lion's Mane Mushroom Elixir Mix
- 1/2 tsp cinnamon
- 1/4 tsp ginger
- 1/4 tsp cardamom
- 1/4 tsp cloves
- 1 tsp coconut oil (optional--see notes*)
Instructions
- In a french press add coffee, Lion's mane and spices.
- Top with boiling water, and allow to sit 5 minutes.
- Press coffee, and pour into 1 large mug (or 2 smaller ones!). Top with cinnamon and star anise.
