Paleo Mini Peach Thyme Galettes | The Nourished Mind

Peaches and thyme and more peaches–oh my!

These Paleo Mini Peach Thyme Galettes are so cute, so rustic and, because of that, so easy to make. I like things that look pretty because they look bad, you know? Am I sucker for an underdog? Or am I just lazy? Probably both. But that’s okay! This recipe let’s you do that!

It’s a simple process of making the dough (5 minutes in the food processor and hour to chill–how easy is that?! All thanks to the no-gluten, you can’t mess it up!) and slices some peaches and toss it in a few other ingredients. Then you just roll out the dough, add the filling, fold it all up and bake for 15 minutes!

You could also make one large galette and bake it longer, as I did in this Squash, Pear + Gorgonzola Galette recipe (it’s the same dough, just with a bit of coconut sugar added!). Also this time around I used whole almond meal (with the skin) because I’m trying to use it up, but I find this crust is much lovelier with the blanched (no skin) almond meal, so I recommend you do that. Both are tasty, but the almond flavour is much more subtle in the blanched almond meal, which I prefer in a crust.

I absolutely love peach season here in Ontario. They’re plump and juice and so friggin soft. That’s why it works so well in this recipe where you don’t precook the filling–they just fall apart! But if peaches are not local to you, or out of season, I recommend just gently sauteeing the peaches in a bit of coconut oil and the maple syrup to soften before baking them!

Paleo Peach Thyme Galette

Ingredients

For the crust:

  • 1 1/2 cup almond flour
  • 1/2 cup tapioca flour
  • 1 tbsp coconut sugar
  • 6 tbsp cold butter (or room temperature solid coconut oil)
  • 1 egg
  • 1/4 tsp salt

For the filling:

  • 4-5 small peaches cored and sliced
  • 1/3 cup maple syrup
  • 1/2 tsp cinnamon
  • 1 tsp vanilla
  • 1 tbsp lemon juice
  • 1 tsp thyme chopped

Instructions

  • Preheat oven to 375F and line two baking sheets with parchment paper.
  • In a food processor, combine all crust ingredients except the egg, and blend until smooth. Add egg and blend low until mixture comes together into a ball. Wrap the ball of dough in plastic wrap and place in the fridge to set for one hour.
  • Meanwhile, combine all peach ingredients. Set aside.
  • When the dough is chilled, divide into 5 equal balls. On a piece of parchment, roll out each ball until it's a flat circle, about 1/4 inch think. With an offset spatula or bench scraper, gentle transfer to parchment-lined baking sheet (3 on one, 2 on the other).
  • Divide filling amongst the galette circles. Reserve any liquid. With the same offset spatula or bench scraper, slide under the edges of the crust and gently fold over the filling. The raw crust is quite delicate and may break, but just pinch it back together at the end!
  • Bake the galettes on the middle oven wrack for 15 minutes. Let cool.
  • To serve, drizzle with leftover maple-peach syrup and a dollop of coconut cream.

❌ Dairy doesn’t *always* mess with hormones.
