Honey Thyme Roasted Peaches + Yogurt | The Nourished Mind

I don’t know why I didn’t make this sooner. This Honey Thyme Roasted Peaches + Yogurt is everything I want in a summer breakfast: it’s seasonal, light, delicious and oddly nostalgic. It feels like summer. Actually, it feels like summer abroad. So good.

Not to mention it’s super nutritious and comes together real quick.

How To Make Roasted Honey Thyme Peaches

I love a quick and easy recipe, and this does not disappoint. Simply toss your halved and pitted peaches in honey, chopped thyme and olive oil and roast in the oven, face down for 20 minutes.

You could also simply sautee these in a pan on the stove. I like the oven because I can walk away from it and drink my coffee, but you can do whatever feels good for you!

The lovely thing about these is that the peaches keep for days, so you make this on a Sunday and eat them for breakfast throughout the week. I like to eat them cold the next day, but you can pop them into the microwave and warm them up if you’d like!

  • Peaches (duh)
  • Honey
  • Thyme
  • Olive Oil
  • Yogurt

Nutritional Highlights

Yogurt: I like to use a full fat yogurt. My favourite is Organic Meadows 3.8%–it has 7g of protein per 3/4 cup, and it’s higher fat content makes it more satiating. You could bump up the protein by using Greek Yogurt, by stirring in protein powder to your favourite yogurt, or by adding in some nuts and seeds on top.

Peaches: Ontario peaches this time of year are absolutely delicious. They contain a healthy source of carbohydrates, vitamin C and fibre. And of course, like most fruits and veggies, they’re packed with antioxidants.

Honey: Ugh, I love honey. When it comes to honey, unpasteurized is best, as commercial honey can often contain hidden sweeteners to cut down food cost. (1) Raw, or unpasteurized honey, also seems to have more health benefits: it has anti-bacterial properties, more polyphenols and even bee pollen, which offers its own anti-inflammatory properties. (2,3,4) The biggest reason to use raw honey though, is for its taste. I hated honey growing up. But it turns out I’d only ever had the heavily processed honey, and so it never really tasted like anything. Raw honey tends to taste more floral, and is super pleasant. So if you haven’t given it a go, I definitely recommend it!

Coconut Yogurt: Don’t do dairy? No problem. You can swap this for coconut yogurt! I would recommend adding some protein alongside this if you’re looking to stay full. You can either add in some vegan protein powder to the coconut yogurt, and eat this alongside a high-protein smoothie!

Olive Oil: I love cooking with olive oil because it’s right there. But if you prefer coconut oil or melted butter, feel free!

Honey: you can definitely swap this out for maple syrup if you’d like!

Thyme: I love this combo, but if savoury herbs in your breakfast is not your thing, swap out for a pinch of cinnamon!

Honey Thyme Roasted Peaches + Yogurt

A seasonal summer breakfast that comes together quickly and is sure to feel nostalgic.
Course Breakfast
Cuisine seasonal, summer
Keyword honey garlic, peaches, thyme, yogurt
Prep Time 10 minutes
Cook Time 20 minutes
Servings 6 people

Ingredients

  • 6 ea peaches pits removed
  • 1.55 tsp thyme chopped
  • 2 tbsp honey
  • 1 tbsp olive oil or melted butter

Instructions

  • Preheat oven to 400F and line a baking sheet with parchment paper.
  • In a medium bowl, toss together all ingredients.
  • Place peaches on a baking sheet face down and bake for 20 minutes, until peaches have browned but have still kept their shape.
  • Serve peaches over yogurt and drizzle with honey.
