Watermelon, Cucumber + Tequila Cocktails? Yes, you want these.
Happy Sunday! And Happy Father’s Day!
Allie and I just got back in Canada last night, after spending a luxurious week in Barcelona. The food. The beach. The drinks. The food, again. It was such a great trip. I even got a tan. (Well, okay, you have to squint real hard, and it helps if the lighting isn’t too bright, but I swear, it’s there.)
So basically I’m a baby bit jet lagged, and after going to bed at 10:30 last night (4:30am in Barcelona time), I still managed to wake up at 6 am, full of energy and ready to conquer the tornado of a mess that is my living situation. We cleaned, went grocery shopping and cleaned some more. Now, however? I feel like a sleepy zombie–I officially have a vacation hangover. Although, it may actually be a hangover–there was a lot of wine in Spain. Weird, I know.
(Also: we picked up our pets, and they were such big babies–I mean really guys, can’t you hold it together, for one week, and okay, Allie and I cried too.)

So speaking of drinking and hangovers and all that jazz, I am pumped to share this recipe! These cocktails turned out so heavenly. They were just the perfect blend of refreshing and light, but also, they still packed a (tequila) punch. The great thing about these cocktails is that they are so hydrating thanks to the watermelon and the cucumber, both of which are made up mostly of water. This makes it an excellent drink to have on a hot summer day, when you’re sitting out on the balcony with friends. Or, you know, inside where it’s cool, if you burn easily like I do.

Allie and I drank quite a few of these the weekend before we left to Barcelona, partially because I was testing them, but also because we went to see Hayley Kiyoko (who I talk about here) in concert! Oh, it was a gay lady dream. Literally: there were 1400 people and I’d say about 95% of them were queer women. And adorably, a lot of the younger ones came with their moms.
To make the garnish for this drink, I just cut the ends of a cucumber and then took a peeler and peeled from one end down to the other to get a few nice strips. This is optional, of course, but super easy to do!

Watermelon, Cucumber + Tequila Cocktails
Ingredients
- 1/4 seedless watermelon, cubed + frozen*
- 1/4 cucumber
- 1 lime
- 3 oz tequila
- 2 tbsp mint, packed
- 1 tbsp honey
Instructions
- Blend all ingredients together.Strain through a sieve or cheesecloth.Divide the cocktail between two glasses and garnish.**

I always try to experiment with making the best tequila cocktails as you can do so much with tequila. I think that tequila is the most versatile drink that you can use to make cocktails.
