Superfood Beet Pickled Eggs Avocado Toast

April 28, 2019 by Tisha Leave a Comment

This quick and easy breakfast is not only nutrient-dense, it also has a beautiful pop of colour! Thanks Vista Magazine for gifting me with the Planet Hemp Super-seeds!

Is this really a recipe? I have no idea. But it’s super tasty–and also big time pretty (and that’s half the reason why I eat anything, ever.)

If you’ve never tried pickled eggs, and are wigged out by the thought of them, I get you. In fact, up until I tried these bad boys, I was not a fan of pickled eggs. I found them rubbery and weird and something I very much did not want to be putting in my mouth.

But then last week, at work, we made pickled eggs for a shoot, and the colour won me over. They were stunning. Look at that pretty red hue? Ugh. I had to know what they tasted like. So I took a deep breath, plugged my nose, and you know what? They were pretty freaking bomb. A hint of beet, but mostly, it just tasted like a hardboiled egg. We used this recipe here using the option with beets. The eggs keep in the fridge for up to a month, and should sit in the pickling liquid for at least two days to get the deep magenta colour.

(Oh, and the toast used here is sourdough bread, which is easier to digest than regular bread. Feel free to use gluten-free bread if that works better for you!)Superfood Beet Pickled Eggs Avocado Toast | The Nourished Mind

The other star on this avo toast, is this Planet Hemp Superfood Super-Seeds. Very delicious. I have the Savoury Onion flavour and it reminds me of an Everything Bagel spice mix. I dig it. It’s also jam-packed with nutrition: it has hemp seeds, pumpkin seeds, sunflower seeds and sesame seeds, with 1 serving (3tbsp) providing 8g of protein, and 35% of your RDA for magnesium. That’s pretty cool!

More importantly, it makes my breakfast feel fancy (so then I don’t have to be). In fact, somehow Avo Toast in any capacity makes me feel like I have my shit together.

I’m a big fan of things you can just toss in to boost your nutrition. And if it adds flavour, that’s a bonus! If you want to try it, Planet Hemp is offering all The Nourished Mind readers a 15% discount, courtesy of Vista Magazine! Just use the code VISTA15 at checkout.

I think this would be really delicious to add onto salads, soups, eggs, toast, roasted veggies, you name it.

In other, non-avo toast related news, I’ve started finalizing my trip to the UK in June. And if I’m completely honest? I’m absolutely terrified. See, I’ve actually never travelled alone. I’m not exactly great with the whole navigation/geography/getting from point A to point B alive and with both shoes still on. It’s not my strong suit. We can’t be good at everything, you know?

The fact that I make it from one end of the city to other really amazes me sometimes. Point is: I’m very excited for London. But I’m really hoping I don’t cry. More than once. A day. So for any of you that have travelled alone, or have been to the UK, please send me your top tips, your favourite places and also, maybe, a few prayers.

Well that’s all I have for you lovely humans today! Enjoy your Sunday, I hope it’s as cozy as mine has been!

Dairy & hormones—friend or foe? There’s a lo Dairy & hormones—friend or foe?

There’s a lot of mixed info out there, but here’s the truth:

❌ Dairy doesn’t *always* mess with hormones.

✅ Some people are sensitive to it, while others digest it just fine.

✅ Full-fat dairy (like yogurt) has probiotics, calcium & vitamin D—which can actually help PMS!

The key? Listen to your body. If dairy triggers symptoms like bloating or cramps, you might want to try temporarily cutting it out to see how you feel.

But if you’ve been told you need to cut out dairy for your hormone health, just know there’s a lot of benefits to incorporating it into your diet! #hormonehealth #integrativenutrition #periodproblems

Endometriosis affects about 10% of women and people assigned female at birth worldwide, and is one of the most common causes of pelvic pain for women of reproductive age.

While we still need more research in this area, some foods might be helpful in lowering inflammation, getting rid of extra estrogen and avoiding the triggers that make endometriosis symptoms worse.

✨Did you know?✨

There’s a link between IBS and endometriosis: they often co-exist together. If you struggle with symptoms like bloating or stomach pain, it might be worth checking for food intolerances, celiac disease or IBS.
