Is this really a recipe? I have no idea. But it’s super tasty–and also big time pretty (and that’s half the reason why I eat anything, ever.)
If you’ve never tried pickled eggs, and are wigged out by the thought of them, I get you. In fact, up until I tried these bad boys, I was not a fan of pickled eggs. I found them rubbery and weird and something I very much did not want to be putting in my mouth.
But then last week, at work, we made pickled eggs for a shoot, and the colour won me over. They were stunning. Look at that pretty red hue? Ugh. I had to know what they tasted like. So I took a deep breath, plugged my nose, and you know what? They were pretty freaking bomb. A hint of beet, but mostly, it just tasted like a hardboiled egg. We used this recipe here using the option with beets. The eggs keep in the fridge for up to a month, and should sit in the pickling liquid for at least two days to get the deep magenta colour.
(Oh, and the toast used here is sourdough bread, which is easier to digest than regular bread. Feel free to use gluten-free bread if that works better for you!)

In other, non-avo toast related news, I’ve started finalizing my trip to the UK in June. And if I’m completely honest? I’m absolutely terrified. See, I’ve actually never travelled alone. I’m not exactly great with the whole navigation/geography/getting from point A to point B alive and with both shoes still on. It’s not my strong suit. We can’t be good at everything, you know?
The fact that I make it from one end of the city to other really amazes me sometimes. Point is: I’m very excited for London. But I’m really hoping I don’t cry. More than once. A day. Superfood Pickled Beet Avocado Toast
Ingredients
- 1 piece sourdough bread
- 1/2 avocado mashed
- 1 beet pickled egg sliced
- 1 tsp Planet Hemp Superseeds
- 1 tsp alfalfa sprouts
Instructions
- 1. Toast sourdough bread. 2. Top with mashed avocado, sliced egg, hemp seeds and alfalfa sprouts.
