Happy New Year!
It’s been a great start to January: there’s been hot yoga, there’s been drag queens, there’s been–no, actually that alone has made for a promising new year. Seriously though, I am pumped for 2018. I have big dreams, guys. Big dreams.
So far these dreams mostly pertain to getting enough sleep to actually be dreaming, but also, there’s something very alluring about the fresh start that a new year brings. Since I know I’m not the only one feeling like that, and I also know that for a lot of us, the new year brings dreams of eating better, I thought I’d share my top 5 salad recipes from The Nourished Mind archives! These are all super simple to make, and great to eat in the winter when you’re cold and the idea of eating anything that’s not a bowl of soup is less than appealing.
The best way to winterize any salad, if you ask me, is to add a starch–think squash, carrots, sweet potato, quinoa, warming spices like turmeric and ginger, or a warm protein, like chicken or eggs! How do you like to get in salads in the winter?
