Anti-Inflammatory Turmeric Ginger Energy Balls {vegan, paleo, keto} | The Nourished Mind

Ingredients

cup
unsweetened shredded coconut + more for rolling
1/4
cup
cashew butter
1/4
cup
hemp seeds
juice of 1/2 lemon
zest of 1/2 lemon

tbsp
raw
unpasteurized honey (or 1/2 tsp stevia drops)

tsp
turmeric
1
tsp
ginger
Instructions
Place all ingredients into a food processor and blend until smooth, about 2-3 minutes.
Using a tablespoon ice cream scoop, scoop small balls, and roll into a ball with your palms (I recommend wearing gloves to avoid yellow hands!).
Roll balls into shredded coconut until well coated.
Notes
Store in an air-tight container in the fridge for up to a week!
